Oyster Stuffing with Shiitake Mushrooms & Leeks

This is my annual stuffing recipe, carved from the pages of the November 2000 issue of Bon Apetit. It is with great hesitation (yet great love) that I share it with you. If you follow the recipe, this is a prizewinner.

Mmmmmmm.... stuffing. I've been known to stab people with forks over the last of the stuffing. Thursday should be mayhem. Mayhem I tell you!
